Generational Neutrality
The fund is considered to be permanent, and its benefit to future generations should be equal to its benefit to the current generation. Investments and spending are coordinated so income maintains its real purchasing power into the future on a generation-neutral basis.
Sustainable Spending
Income from an endowment is to be spent, not hoarded. It is DIG's policy to use the earnings of the fund, on generation-neutral basis, to help meet the needs of the institution and fulfill its mission.
Minimize Volatility
Because many of the needs and uses of the fund's income are recurring, the fund's asset management policies and spending strategy attempt to minimize the year-to-year volatility of the amount available for spending.
Restrictions
Those who manage endowment funds exercise those duties in a special position of trust and fiduciary responsibility. Donor restrictions (time or use restrictions) will be honored to the extent permitted by law.
Spending Strategies
Funds available for distribution are derived from dividends, interest, and realized/unrealized capital gains on a total return principle. Any unexpended funds are accrued for distribution in subsequent years.

Supports Student Scholarships & Grants
The fund will maintain a minimum balance equal to $2,300.00 per active student. 50% of the excess funds will be used to directly support student scholarships and grants.

Supports Teaching, Research & Public Service
Professional development of faculty and staff is a critical component to the educational success of student apprentices. Funds are allocated to promote development through research and community engagement.

Supports Expansion & Growth Goals
Spending is restricted to 25% of the amount allocated to future expansion and growth of DIG. Examples of expansion and growth include increased student support services and technological improvements.
Rebuild the Hospitality Industry
Through apprentice education, students work with approved chef-mentors building a strong foundation. DIG assists in rebuilding the culinary workforce to provide higher skilled employees.
Innovative Culinary Education
Students track skills online while working in the industry, and attend asynchronous online classes. We meet the needs of today's student without interfering with employment schedules.
Non-Profit Focus on Debt-Free Grads
Operated under Soil2Service, Inc (a 501c3), we strive to graduate students debt-free since apprentices are paid on the job! We teach a holistic approach to customer service and careers.
